Macaroon-the Honored Cookie of the Day

Food holidays usually catch my attention.  Today, May 31rst is National Macaroon Day.  My favorite type is the coconut macaroon.  I admit I have never made them but I have tasted quite a few.  Here's another confessionwhenever I hear the word macaroon I have to stop and think what it is.  A nut comes to mind but then it comes to me...cookie!  Not sure if I'll celebrate today but next time I have a macaroon, I'll look back fondly on this day.
