I made this delicious, easy, chicken and cheese enchilada recipe last night for dinner...and it was good!  I consider myself a novice in the kitchen, but this dish made me think I could invite people over for a dinner party.  To think, I wouldn't have to have pizza party.

This 10 ingredient recipe will have you looking like you really know your way around the kitchen.  Here area couple of tips to make it even easier.  I purchased a precooked roaster chicken at the grocery store so I didn't have to worry about the mess and extra cook time with raw chicken.  I also added black beans to the chicken mixture to add color, texture, and volume ( I almost sounded like a pro, there).  It made eight, good sized, enchiladas.  I recommend that you totally try it.

Tonight I want to try a super easy dessert a listener shared with me on Facebook.  You need an box of yellow cake mix, 5-7 apples, sugar, cinnamon, and butter.  Thinly slice your apples and spread out evenly in a 13x9 baking pan.  Sprinkle the cake mix over the top, covering the apples.  Sprinkle two tablespoons of sugar and one tablespoon of cinnamon over the cake mix.  Melt a stick of butter and drizzle over the top.  Bake at 350 degrees for about 30 minutes.

Oh, I am impressing myself and I haven't even made it yet!  Maybe I should pitch this for the Taste Of Home Cooking School coming November 2, 2013.  Well, I better leave that to the pros.  Hope you enjoy these easy recipes.
