Barbecue Journey with Dan ‘The Man’ — Citrus and Soy Flank Steak
The beauty of a perfectly cooked steak is that it requires almost no seasoning and it is still enjoyable.
Throughout this "barbecue journey" recipes have been packed with flavor, often using a rub filled with up to a dozen spices. And each dish struck a number of notes.
I have grown to trust Dr. BBQ and the recipes in "Ribs, Chops, Steaks & Wings." There hasn't been a recipe that I haven't liked, and most fall on the side of incredibly delicious than average.
Citrus-and-soy marinated flank steak does not use a rub. It relies heavily on the flavor of the steak itself, which is only slightly enhanced by the four-ingredient marinade.
I soldiered on despite my trepidation that this steak may not have the big flavors to which I had grown accustomed. I mixed the orange juice with the soy sauce and crushed garlic. I marinated the steaks as directed, cooked them to the perfect medium rare and took my first bite.
The flavors were subtle. This is flank steak. The marinade does not attempt to hide the flavor. If you don't like flank steak, you won't like this.
I think if I make this dish again, it will be for sandwiches. Flank steak is perfect on top of a salad, or in a sandwich with grilled peppers and onions. Dr. BBQ even recommends bringing it to a tailgate. And with a beer in hand, who can deny the good times ahead.
Overall, I will say this: Citrus-and-soy marinated flank steak is a good, quick recipe. If you don't have a ton of time, throw some steak in the marinade in the morning and throw them on the grill at night. You'll have dinner in 20 minutes.

Here's what you need:
2 Flank Steaks (about 3 pounds)
2 cups orange juice
1 cup soy sauce
10 garlic cloves, crushed
2 teaspoons black pepper
Directions
1. Make marinade
Whisk together OJ, soy sauce, garlic and pepper in a bowl.
2. Prepare steak
To fit the steak into smaller Ziplock baggies, I cut each steak in half. Then, use a sharp knife to make a shallow slashes on a 45-degree angle to the grain. Repeat in other direction, making an X pattern. Flip and repeat on the other side.
3. Marinate the steak
Place steaks in baggies and pour marinade over them. Squeeze as much air out of the bag as possible and zip shut. Let marinate between 4-12 hours.
4. Grill steak
Grill on high for four minutes per side. When finished, tent foil loosely around steaks and let rest for 5 minutes.
