It is the season of the pumpkin and there are so many great benefits to adding pumpkin to our diets.  They are a delicious, low calorie source of vitamin A, vitamin C, and vitamin E.  Pumpkins are also rich in minerals.  SUNY Oneonta Dietetic students, Michelle, Tara, and Lianne offer great tips to incorporate pumpkin in every meal.
